Bartender's Guide

A guide for Bartenders and those interested in mixology

Mission

To provide easy access to great drinks for professionals and do it yourselfers.

Bar Equipment

These are some examples of equipment that you should have in a complete home bar. However, the function of many of these items can be duplicated with standard kitchen equipment.

  • Bar Knife : For cutting or coring fruit, or for peeling rind.

  • Can Opener: Pretty self explanatory; opening beer bottles, etc.

  • Ice Bucket: For keeping ice close at hand and cold.

  • Ice Tongs: For placing ice cubes into drinks -- a sanitary measure.

  • Jigger: Convenient measuring tool, usually showing 1/8, 1/4, 1/2 and 1 oz. measures. Some are two-sided: 1 oz. on one side, 1 1/2 oz. on the other.

  • Juicer: For squeezing fresh juice for drinks... always preferred to pre-made.

  • Long Bar Spoon: Makes life easy when stirring drinks in large glasses or pitchers.

  • Measuring Spoons: For when drink recipes call for dry ingredients or are measured in table or teaspoons.

  • Wooden Muddler: This device is for crushing leaves (such as mint) against the bottom of a glass without scarring it. If you can't find one of these, use the back of a wooden spoon.

  • Large Pitcher: For mixing large quantities of drinks. Pitchers of drinks usually contain 5-7 oz. of alcohol, so use proportional amounts from the smaller recipe, and lots of ice to prevent dilution.

  • Shaker: If you really want to be classy, you can shake drinks (see Shaking in the techniques section).

  • Covered Shaker: A somewhat cheaper alternative. The cover fits over the top of a glass for shaking.

  • Strainer: When you want to shake with ice, but not have ice in the final drink. Pour from the shaker through this device.

  • Waiter's Corkscrew: This is a handy little number for keeping in the pocket. Includes corkscrew, can opener, and knife.

  • Winged Corkscrew: Somewhat easier to use than the waiter's corkscrew, but also bulkier.

Measuring and Metric Standards for Distilled Spirits

  • oz. = ounce

  • ml. = milliliter

  • cl. = centiliter = 10 ml.

Glassware

  • Shot Glass: Guess we don't really have to explain this one. Might buy a few extra of these, people tend to get a bit rowdy after continual use...

  • Old Fashioned Glass / aka. Lowball or Rocks: For shots of alcohol over ice primarily, also for smaller drinks.

  • Highball Glass: You can use this for mixing almost any drink. A good stand-in for similar looking glasses.

  • Cocktail Glass: You can use this for serving many different cocktails. In a pinch, you can also use it for serving martinis, but you should really get true martini glasses (no picture available).

  • Beer Pilsner: This is traditionally for beer, but works well for serving large margaritas and the like.

  • Red Wine Glass: Use for red or white wine (if you don't have a white wine glass), or water.

Optional Glassware

  • Beer Mug: For beer or beer-shot combinations.

  • Brandy Snifter: What can we say?

  • Champagne Flute: The best way to serve champagne. The bowls allow the fizziness to escape too quickly. Nothing worse than flat champagne...

  • Collins Glass: For drinks that require something a bit larger than an old fashioned glass. These look good when frosted before serving.

  • Cordial Glass: Generally for concentrated liqueurs...

  • Irish Coffee Glass: This makes almost any coffee or other hot drink look good. Generally garnish with whipped cream and chocolate shavings or cinnamon.

  • Parfait Glass: Similar to the irish coffee glass, is generally used for drinks with ice cream or fruit in them.

  • Pousse Cafe Glass: Usually used for layered drinks.

  • Sherry Glass: Again, what can we say...

  • Sour Glass: use for sours (see the recipe index).

  • White Wine Glass: A bit smaller than red wine glasses with a slightly different shape to the bowl.

Techniques

Shake/Blend

This method is common with drinks containing fruit juices, cream or eggs. In today's time, a blender is most often used to blend drinks, but the old fashioned shake method is outlined below.

Procedure:

Fill the shaker to 2/3 with ice and add the ingredients. After adding the ingredients cover the shaker and procede to shake. This is usually done by shaking over your shoulder. Remove the cover and strain into the proper glass, allowing the drink to form a foamy head. Finish by garnishing and adding a straw.

Flaming

Liqueurs with a high alcohol content are really easy to flame.

Simply warm your liqueur up in a sauce pan and have a pre-warmed cocktail glass ready. After heating the glass, pour the rest or other alcohols into the glass to warm. The glass can be heated over an element or a flame, but use caution to avoid contact with the glass and element or flame as the glass will break or char easy. When the alcohol has been heated, ignite it and add it to the alcohol in the glass. If done properly, the alcohol in the glass will be warm enough to flame also.

Caution:

When flaming liqueurs be sure to keep any objects away from the glass. Flames can often shoot high up and ignite things in their way. Like your hair! So if doing this, please use caution and enjoy the fireworks.

Layering

One of the more difficult techniques in bartending is layering or floating liqueurs. Although this seems like a challenge, there is a very simple method that you can use. Each liqueur weighs differently and either floats or sinks when added to another. Most recipes are written with the heaviest liqueurs printed first. If all else fails, experiment and get used to the liqueurs that you most often use.

To pour the liqueurs into the glass, simply use the rounded or back part of a spoon and rest it against the inside of the glass. Slowly pour down the spoon and into the glass. The liqueur should run down the inside of the glass and smoothly layer. This technique takes practise, but can be mastered by anyone. Make sure that the liqueurs are poured in order of their weight, starting with the heaviest first.

  1. If a person doesn't know the specific gravity of liquor or a liqueur, they can read and compare the proofs of the bottles. The proofs can help create the layered drinks. Lower proofs of liqueurs generally mean there is more sugar and that the liqueur is thicker and heavier (e.g. 151 rum can be floated on top to make flaming shooters). Remember, the same type of flavoured liqueurs that are made by different companies can sometimes have different proofs (or a specific gravity), and this conflict with other liqueurs and spoil the layered presentation.

  2. If a person tries to create a shooter and messes up the layers, he can place the shooter in the refrigerator for about an hour and the liqueurs will separate themselves. This is one that I have not seen performed, but I found it in a bar book.

Simple Syrup

Known under various names, from Bar Syrup to Sugar Syrup, this simple to create concoction is basically a supersaturated mixture of sugar and water. As a liquid, it easily dissolves in drinks where a bit of added sweetness is called for.

To make, gradually pour two cups of granulated sugar into a cup of boiling water and simmer for about ten minutes. Keep in your refrigerator until needed.

Stirring

Cocktails which contain only liquor require stirring with ice in a mixing glass with a bar spoon for proper mixing. It is necessary to stir enough to ensure that the drink is well mixed and chilled, but not enough to dilute the drink.

Procedure:

Fill the mixing glass aproximately 3/4 full with ice and then add the required amount of liquor. Stir slowly in a clockwise motion for about 3-4 stirs or circles around the glass. After this is done, strain the drink into the serving glass and garnish it accordingly.

Glass Preparation

Chilled glasses are the best way to serve your cocktails. Glasses can be put in the refigerator before serving, or another common way is to fill the glass with ice before preparing the drink, swishing the ice around then emptying the ice before pouring. Either way will work and will chill your glass.

Often a recipe calls for a glass that is frosted to enhance the drink. There are a couple of different ways to frost a glass depending on the recipe. These are very easy to do and just take a little time before the drink is to be made.

The most common frosted glass is simply put in the freezer or buried in ice cubes long enough to create a white frosted look on the glass.

For drinks that call for a sugar frosting, take the frosted glass and wipe the rim with a slice of lemon or lime. After this, dip in powdered sugar to complete the effect. Margaritas are prepared the same, but the rim is coated with lime and dipped in coarse salt.
